So two new Vesuvius E61 owners then awaiting machines? It’s easy to turn the head to another machine and I get the enthusiasm for the lever machine but a very happy E61 owner here for about 3 ½ years. I am as delighted with it now as I was when I got it, perhaps because I got the zen lever thing out of the system with a Pavoni in the past and having watched the lever in action and the mess that keeps on flowing after the shot is pulled it took me back in time to the Pavoni routine. I wouldn’t swap the easy clean after the E61 shot. As I say a personal thing.
DC got me into it the slower phased extractions using a finer grind with a saturation phase before the extraction emerges. In my case I prefer to drink singles so always use the twin spout (I know a naked portafilter is the best way to ensure nothing is going wrong with technique but I’m not a fan and got that out of the system too over the years). So a nice profile of circa 17.5g double basket in, shot starting at around 20 secs then 2g per second for 35g around 37 secs, drop portafilter to dry a few secs, make drink with the other put on the drip tray to have in a while (or the wife has it), easy clean with blind portafilter wiggle and container, done. Minimal mess. I then keep a flat 9-bar 20 sec profile on the Vesuvius purely for the backflush and puly cafe routine every month or so.
