MWJB Firstly, there isn’t really a 7.5 score in the scale, I’d force a choice as to whether your 7.5 are 7s, or 8’s. If you enjoy a 7.5 significantly more than a 7, might that not actually be an 8?
The idea was to try differentiating between the brews when something changed in the recipe and the results changed. Some of them were better than the 7s, but I don’t know if they’d fall into an 8, “like a lot”. Maybe one or two. Most were better, but not significantly so and had the same malfunctions, just a little less of it. I’ll stick to whole numbers and maybe use the comment column for it instead. Without comments on the difference, they would appear the same. I know the difference right now, but for future reference when they are forgotten and only the log remains, I thought it would be useful.
MWJB Unwanted sour/acidic - wouldn’t this be more likely to be low side of normal extraction? But, some of your sour brews have been at the higher side of sample? Going coarser would drop it a bit, maybe the extra 10g would correct it.
That would have been my gut reaction, to go finer or extract more, but I have struggled with which way to go before when getting close to great cups. My thought was to test it and maybe extend the brew time a little bit more to 25s/30g. Partly since your suggestion for the papers has been coarser, partly to see if it made a difference in texture that was perhaps contributing to the negative aspects. Until recently, I’ve never thought much about how grind setting impact the cup and that you can achieve equally good taste, but like the cup and mouthfeel more by changing the grind and texture. I read a comment by you somewhere on a cup you thought was “chewy” which gave me a smile. I’d never thought of describing a cup of coffee as chewy, but it probably makes sense to your references and feeling of the brew.
MWJB How is the mouthfeel of the lower preference brews (filmy, powdery, or clean?)
The cup I’m drinking now (7/9), I’d say is more clean, maybe filmy, than powdery. I’ll try to put down some words on it from now on. On a lot of the brews I get an unpleasant feeling post drinking and want to rinse. When I drink better or great coffee, it’s a much more pleasant feeling, like you can breathe through the mouth to experience a lingering taste after the cup is empty, and not having the desire to rinse right away.
MWJB Is it easy for you to make a brew video?
I read your post right before brewing, so I made one just now. I also recorded one of the refractometer process. I probably got something to improve there. There is no audio commentary, only coffee making sounds.
