Like Jake, we also don’t like dark. Try to avoid medium dark, although we get stuck with it when the roasters’ description is not correct.
We have pulled light, medium light and medium. The Evo is fantastic and
get the best out of the puck at 10.5 bar pressure. The EVO gives a drinkable cup, even if the pour is faster or channeling. The basket size also makes a difference to the shot quality.
We cut the shot just under 8 bars for about 36-37g and 7 for about 45g for light / medium light. Hardly any shot is cut at 6 bars these days.
