Just to update this. I contacted Limini and received an answer along the lines of they saw absolutely nothing wrong with sending out 21 day old beans that had a shelf life of 6 months. I pointed out that a busy cafe might use a kilo of coffee in an hour or a day, therefore the age of the beans becomes of less importance. To a home user, a kilo lasts me a month and in addition, since I am used to receiving recently roasted beans it mucks up my coffee rotation as I always have several beans waiting to be used.
