
I managed to do a good roast pork for once with tasty crackling! I did it at 30mins per 500g plus 30minutes. Put the pork on a bed of roughly chopped onions and pour 500ml or so of wine around it. Start it off at 200’C fan, then lower it to 140’C fan once it’s gone in. In the last half an hour raise the temperature up to as high as the oven will go.
Oiling the skin side and then sprinkling it liberally with sea salt seemed to work wonders for decent crackling.
