Haven’t used my Chemex for months - been relying on V60. Not been able to hit the tasting notes of some Ethiopian Anaerobic Natural. Did a couple of V60s - extraction yield was just under 23% for the first and only 0.3% lower for the second despite opening the grind on the EKs by two spots which is a lot given the EKs range is 0 - 16.

Through the Chemex, with the grind as coarse as it can go on the EKs, the extraction yield came out at 20.5%. The difference in the cup compared to the V60 was pronounced. Tasting notes of lemon, Earl Grey and hint of tropical fruits - none of which present in the V60 cups.

Guess I will stick with Chemex for the foreseeable.

Just got my Chemex and did my first pourover with it. Don’t know why but it was the best pour over I have had. Smooth flavoursome and well, just a lovely drink.

My Chemex was second hand and Being a bit OCD, I thought the wooden collar looked a somewhat worn, so I thought I’d give it a birthday… Rubbed down then a couple of coats of shellac, once dry a light rub with 00 wire wool, wipe the dust off then again rubbed with the wire wool dipped in a tin of furniture wax polish then rub it on the wood. Finally, a buff up with a cloth and then a brush (just like shining your shoes) and voila!…

Freshened up collar aganst an original.
