You can indeed probably just stick the burrs in anything, it’s likely people will. I’m not sure the burrs are available to buy on their own yet, but there was certainly a listing for both new burrs.
You’re obviously getting build quality which in my opinion is still unmatched in the home grinder space. Of course, this is largely irrelevant to many buyers.
In terms of the knocker and it being frowned upon, I think that’s historically been because it has absolutely been used as a crutch to attempt to make up for poor design.
However, I think starting with the Ode, it’s more become a realisation that it’s a futile attempt against physics to try to reduce retention as much as possible without some secondary device. Mainly due to static, and especially at filter coarseness.
As I said above, if the Duo had a knocker, it would’ve solved one of my key issues with it. Of course a manual tap on the chute is an option, but that’s essentially a less practical version of a knocker.
Also to try not to sound entirely like a fanboy here, I really wouldn’t say the Philos does anything wildly special as purely a 64mm SD espresso grinder (other than the burrs which as you say aren’t necessarily tied to the grinder). However, as a multi purpose grinder, with top level build quality, and in my opinion an enjoyable workflow to seamlessly switch between methods, it’s certainly the best I’ve tried by a margin.
