Wondering if anyone has figured out a simple guide for varying your water temperature for roast depths e.g. “Light 102, Medium 96, Dark 92” - thanks.

    tompoland We know there isn’t one unfortunately. For Kenyan mikari — light, we have been keeping the brew temp at 98.5 and the group at 92.

    5C difference for medium dark and dark, 5.5C-6C for medium and 6.5C -7C for light. This works fine mostly.

    tompoland The group is so massive and actively heated with approximately 220W for only approx 100ml of water that it can probably cope with the brew boiler being left at 98 and adjusting the temperature of the group PID.

    In the Alpha, I lost one group heater (poor fit on old group)…. otherwise I would have experimented with a 5 C differential between boiler and group, below a 93 C group temperature.

    I pulled a shot for Kenyan with group at 93 and brew at 100. I didn’t really like the espresso as I ended up with too much acidity. It was ok with milk. I like 92C/98 for the light and medium light.
