@MWJB I’ve had a few attempts at 15g/20s. The C40 was perhaps too fine for that, with a 5:27 dry bed.
I forgot that I didn’t have Rombouts at work, so I’ve been using the new Hario papers and Lido 3. It’s been at a finer setting than I’ve been using on the C40. I got 9.5% through 400, but the scale is not as precise, so it may be +/-1%. Brews going faster, pretty clean mouthfeel. I don’t get that same pith, sour mouthfeel, but it’s still on the sour and acidic side, probably low EY.
I don’t go too scientific at it with this setup, but I might take the Lido home to get better sifting numebrs and try tuning it in later. I use bottled water, which may also be a factor. At home we get it from a well.
The 15g/20s I’ve tried here has also been flat and muted. Cloudy, if that makes sense. Some of the sharp sourness and acidity went away, but also the good acidity.
How did you rate them compared to the previous setting?
I am enticed by the coarser range. It really cleans up the cup. If only I can get the balance a bit better, turning sour acidity into something sweeter.
