Got to admit whilst I had reasonable success using a casserol dish, I saved up a few shekels and splashed out on the dog’s gonads for baking sourdough in…the cast iron Challenger Bread Pan. For me it was a game changer. Apart form baking the best sourdough it is also good for many other breads. I’ve done great Foccacia, French Sticks, Rolls too. The design also allows for other foodstuffs to be cooked in both the base or even just the lid.
Of course there are other cast iron bread pans out there probably cheaper, but as I saw it a once in a lifetime purchase I thought why not.
