I finally received my Gaggia classic evo pro 2024 today but the coffee just seems tepid if it was set to 90 something degrees it should be reasonable hot shouldn’t it?

Have a look at temp surfing

Im confused. How do you know it was “90 something degrees”? That machine does not have a PID, nor a display to tell the temperature it’s operating at. This class of machine is notorious for having to temp surf (as per Jake’s comment). Additionally, you need to let the machine warm up for at least 15 minutes, and you must leave the portafilter half locked so that gets heated up too. If it’s not, due to the thermal mass, your coffee will be cold. Me personally… I wouldn’t have bought a machine like that in this day and age. For the price, you are far better off with a Lelit Anna.
MediumRoastSteam I don’t know it was 90 something degrees but that is what it’s supposed to be isn’t it.

Dell - on a Gaggia Classic… your guess is as good as mine. And that’s the problem.
Did you heat up the portafilter beforehand?
