Many people think scorching and tipping of beans is caused by too much heat as you approach/go into first crack…Unfortunately it’s not the damage happened much earlier in the roast, actually when you put the beans into the drum. The damage can be seen on even small roasters like mine with a heavy drum (mines perforated which helps) happens with too high charge temperatures. I try and keep my charge as low as I can to avoid this. I usually charge at 185 to 190, then temp will drop to 135/140 with turnaround a few minutes later.
I suppose if the drum is thin, then it may not be able to hold so much heat (everything is relative though as the charge of beans is lower), 210 seems a highish temperature, but I suppose the designer had his reasons for this recommendation.
